Living a more conscious life can be implemented in many different ways. The basics are spending less and do more well thought purchases. One of the things you should definitely try this year is to eat less meat. We already shared some meat free recipes and this time I am about to share one of my personal favorites; the pumpkin stew!

For four persons you need:

– One Orange Pumpkin
– One Eggplant
– One Red Onion
– Two to Three Garlic Slices
– One Chicken Bouillon
– Fresh Mint
– Fresh Coriander
– Couscous
– Feta Cheese
– Black Olives
– Olive Oil
– Pepper & Salt

So let’s start! First you have to peel off the skin of the pumpkin and cut it in pieces from approx. 2-3 cm. This is the hardest part, I promise! When you are done, you heat the pan with a bit of olive oil and bake it for a while. In the meantime you also cut the eggplant, red onion and garlic and put it all together when you finished this. Now you add the Chicken Bouillon and let it steam with the lid on top for ±20 minutes. In the meantime, you can cup the fresh mint and coriander and prepare the Couscous.

Put the fresh mint and coriander in the pan for the last 5 minutes before you put it on your plate with the couscous, feta cheese and black olives. If you want you can add the last bits of fresh greens on top a voila! Ready to enjoy a delicious meat free meal!
